Savory French-Toasted Mozzarella Bacon Sandwich
8 slices of Koepplinger’s Cracked Whole Grains bread
4 large eggs
3/4 cup milk
1/2 teaspoon salt
1 tablespoon butter
8 slices of bacon, fried or baked
4 big slices of fresh mozzarella
Cracked pepper (if desired)
Whisk eggs, milk, and salt in a large, shallow dish to create egg wash.
Soak slices of bread into the egg wash. Set aside on a plate.
Put one mozzarella slice and two slices fried bacon in between two bread slices. Repeat this for remaining slices.
Heat a skillet on medium heat, then melt butter. Cook the sandwiches, until golden brown on both sides, roughly 3-4 minutes each side. Note: you may need to press on the sandwich slightly as it cooks. Serve immediately.
